The Story of the Mongolian Barbecue

In the 13th Century, the greatest land conquest in world history occurred under the rule of Genghis Khan and the Mongol Empire was born.

The Mongolian army’s daily meal was tenderised strips of meat carried with the warriors on horseback.

After battle, the Mongols would go hunting with lance and bow and arrow. The meat, quickly frozen by the chilled air on the arid steps was thinly sliced and barbecued on their metal war shields. Slender branches from trees were used to toss the food – a kind of Mongolian chopstick. This meal came to be known as their “Victory Meal”, and has been passed down to the present day by their descendants.

Today, the war shield is now a standardised round plate, still true to the original shape and metal. The small branches are now the elongated chopsticks used by our chefs.
